Pretty Darn Decent Spinach Casserole

Description

Preheat oven to 350. Grease a baking dish with olive oil

Blend rice and thawed spinach.
Saute garlic and peppers in the olive oil for a few minutes until not crunchy.
Mix pepper mixture into spinach mixture.
Add 1 block feta cheese and spices

(you can also add the milk and the eggs, but this will turn it from a rice pilaf to a quiche, which would also be good. I haven't tried it yet, but I can imagine :) )

Crumble the rest of the feta on top and slice the tomatoes thin and lay them across the top and bake until cheese is all melty and browned on top.
